Blanching

Pared coconuts are dipped in boiling water for few minutes in a blanching tank. Blanching is the process of killing fungus and viruses in wet powder by passing the steam in to wet Desiccated Coconut powder with 90-100 degree temperature, to make good quality of desiccated coconut powder. It is only applicable if end product is desiccated coconut powder. If end product is virgin coconut oil then blanching is not required because virgin coconut oil has to be produced only in low temperature (60-65 deg temperature). So blanching process is not applicable.
